Shrimp Gumbo in the Crock Pot
1 stick melted butter (or toss it in the crock pot sliced up and let it melt as you chop the rest of the stuff)
1 yellow onion chopped up
1 bunch of scallions chopped up
1/2 bell peper chopped
leave this in the crock pot for a hour or so
now add in (after the hour):
1 small can of tomato sauce
1 can of cream of mushroom soup
1 can cream of celery soup
1 to 1.5 lbs of med uncooked shrimp cut in half (or get the salad shirmp)
cook on low for about 2 hours
serve over white rice...yummm
I got this from my Louisiana friend and it's great (my kids even like it - so big plus there)
edit: Note for the non crock pot users (gasp) you can do this on the stove too just adjust the times (make sure the shrimp are fully cooked and pink)
