I started making chili recently from scratch, and love it! It's something I throw together now, in under 20 minutes, then let sit for a couple hours. It's been perfect to throw in my slow cooker before my kids's Little League games, and come home to a finished meal. Knowing I have it ready cuts the tempation to stop for burgers on the way home.
1 1/2 pounds ground beef
1 16-oz (about) can Kidney Beans
1 16-oz can Red Beans
1 16-oz can Light Red beans
1 28-oz can Diced tomatoes
1 28-oz can Stewed tomatoes
1 Medium onion, diced
Brown the ground beef in a pan. I like to add lots of garlic powder and salt at this point, to flavor the meat.
While the meat is cooking, open and drain the beans. Pour them into the slow cooker. Add both cans of tomatoes. Dice your onion, and add that. The beef should be about done. Add the beef straight from the pan to the slow cooker, draining the fat first, if you wish.
I season with a bit of chili powder, red pepper flakes, and more garlic and salt. Cover, and turn the slow cooker on high.
After about an hour, or one Little League game, chili is perfect and ready to eat. Serve with cheese, fresh onions, crackers, and corn bread, if you want.
