Quiche (quick, easy and good)

Ok this was dinner tonight - OMG so good! Yep things you can do with left over Easter Ham Laughing

 

 

So here is my easy recipe to make it:

Quiche Dijon

4 eggs

1 cup half & half (you can sub w/ whole milk)

1 tablespoon of butter

2 teaspoons of Dijon Mustard (don't worry it doesn't give it a mustard taste - I don't even like mustard and I'm fine with it in it)

1 cup grated Cheese (you pick your flavor - I use either cheddar or swiss)

Add your choice of veggies - some ideas are
spinach (frozen chopped in the block works the best - dethaw and drain - squeeze out any extra moisture with a paper towel), bell peppers, mushrooms, onions or scallions, fresh mushrooms chopped up.....

Add your choice of pre cooked meats (or go meatless) - some ideas:

Ham, sausage, bacon..... if your cooking up now the meat then make sure it is drained well and chopped

 

Mix it all together, pour it in a 9" pie shell (yeah store bought ones are fine), place it on a cookie sheet and bake at 400 degrees for 45 - 50 min or till top browns. Pull it out and let it cool for 10 min prior to serving.

note in the pic above I used: spinach, mushrooms, scallions, cheddar cheese, and left over easter ham! OMG so good!

Total prep time maybe 10 min. tops!

okay lovee Kiss, i'm so making this dish tonight. however, i am going to sub the dijon mustard with ginger wasabi. 

your thoughts on that would be greatly appreciated *as usual!*

I dunno - since wasabi brings tears to my eyes (too hot for me - but haha good on tuna some say).  I'm not a mustard person at all but I will say it makes the quiche.  It does not at all give it a mustard taste but adds the right amount of kick to it.  It is sooooooooo good.

Guess what I had for breakfast....yep quiche!  I think it's almost better the next day too. OHHHHHHHH so good.  I have to make this more often...yummy!  My kids even had it for breakfast - their request not mine.

Edit: Can you double the cheese??? or will it kill it?

Edit2: How much veggies?

Edit3: How much meat?..... or can you just substitute the meat with more cheese?

Oh yeah I add extra cheese.  Lots of veggies - as in I don't think I could get another piece of mushroom in it  I made 4 of these (hey lunch tomorrow).  For four of them I used one pint of mushrooms, 2 clumps of scallions, 1 box of the spinach, mega hand full of cheese (yeah I don't really measure).  Meat wise yeah I dunno - a hand full of shopped ham but yes add more cheese - hell make a cheese quiche - mix it up with different types!

OH did I add maybe 10 prep time total!

 The Cheese Quiche was actually my first thought... but I eat too much cheese as it is, I figured I should at least get some veggies mixed in...

What about a Mac-N-Cheese quiche??? Maybe with some broccoli...  and maybe make the crust outta those onion crispies........ or maybe just throw them on top...... or maybe leave all that out and just have the mac-n-cheese...

what no ramen in the quiche?  OK if you do laundry you can come live with me and I'll make you all the food you can eat.  Hell give me a month and I'll have ya fat.

Doubt it... I eat like a football player and don't gain an ounce... I out-eat Boyfriend and he's 180 lbs... 

As for the ramen in the quiche... eh... I'm too nervous that I might ruin all desire to ever eat ramen again by putting it in a pie.

stop it! i am so having that tomorrow. *drooling* btw, my chicken marsala for the slow cooker turned out f-a-b-u-l-o-u-s this evening!
