Perfect Chicken 3 times

I make this every week, it is so easy and takes care of 3 dinners.

Buy a family size pack of chicken thighs (or more).

Throw them in a pot, cover with water and bring to a boil. Lower heat and simmer. I simmer for 1 hour and 45 minutes,
sometimes 2 hours (sometimes more if I'm busy), you want it so it is still on the bone, but very easy to remove. Remove thighs from liquid and take the meat off of the bone once they have cooled. You can use boneless but it's cheaper to buy them with the bone. Divide the meat into 3rds. Strain the liquid that you cooked the chicken in, which is chicken broth at this point, and hopefully you have a fat separator because that fat has got to come out. Just do the best you can. Return your chicken broth to the pot and add celery, carrots, onions, potatoes, whatever else you like in your chicken noodle soup. Simmer until the vegetables are tender but still slightly crisp, add noodles and continue to simmer until noodles are tender and add 1/3 of the chicken meat. VIOLA!!! Meal #1.

Rough chop 1/3 of your chicken meat. To this add, red onion, celery, red seedless grapes cut in half, and chopped pecans.
Mix in some mayonnaise to bind it all together. You'll have to use your best judgment here, I don't deal with any measurements in my kitchen. This chicken salad tastes much better if you throw it in the fridge overnight and I like to add the pecans right before serving. If you let them sit in there, they get kind of mushy, which is fine, if you like that sort of thing. Throw this on a sandwich roll or eat it by itself. It is THE BEST and that's meal #2!!

Pack up the last 3rd of your chicken meat and on the 3rd day, all you need to do is get some flour tortillas, lettuce, onion, tomato, cheese, salsa and any other taco condiments you may desire. Yummy soft tacos. There ya go. Meal #3.

Of course you can modify any of this, there is no science to it. The only way to really screw any of it up is to add
too much salt or pepper. Which I have done.......more than once........
If you have a bigger family to feed, just add more chicken.

Great recipes. My mom cooks her chicken noodle soup same way. I have a chicken recipe. Buy boneless chicken breast cut it in bite size pieces. You put that at the bottom of the pan. Make stuffing layer that on top of the chicken. Cut up some cheese and layer that on the top of the stuffing. (I use mozzerella cheese but you can use any cheese you really want.) Then I take cream of chicken soup and pour it on top. Cover it bake it at 350. It takes about a hour and half. The time depends on how much you want to make. Whats so good about this recipe is you can use pretty much what ever soup you want.
