I saw 2na mention she makes a marsala in the crock pot, but no mention of the recipe anywhere! Care to share? Smiling

AH YAY thank you!

 

So, i only know how to make mexican food. I have a question...and i know it might be lame...

I dont wanna go buy marsala wine. I have reisling, gerwertz and a couple other white wines here. Can i substitute?

honestly? i have. when i make chicken marsala, i use "dry" marsala. completely different taste than if i've used sweet. to sub the dry marsala, use a dry white wine. i've used gerwurtzaminer and noticed a slightly different taste. but a good one! if you like a sweet taste, you can sub a cooking sherry for the sweet marsala, or a madeira.

Tuna...the other white meat!

Slow Cooker Chicken Marsala

Slow Cooker (Crockpot) Marsala Chicken:

4 Boneless Skinless Chicken Breasts

1/2 Cup Sliced Mushrooms or 1 can mushrooms

1/2 Cup Marsala Wine

1/4 Cup Freshly Chopped Parsley (garnish - optional)

1/4 Cup Flour

1/2 TSP of each: Salt, Pepper

1 TBSP Olive Oil

Directions:

Mix the flour, salt & pepper.

Coat the chicken breasts top and bottom with the flour mixture.

In a skillet, heat the olive oil and add the flour coated breasts. Brown the chicken breasts on both sides. Remove from heat and place into the crock pot. Add the wine and mushrooms to the remaining juices in the skillet and saute for 3-5 minutes. Then, take the remaining flour mixture, sprinkle over the breasts that are in the crock pot. Then pour the wine mushroom sauce over the breasts. Cover and cook on Low for 6-8 hours if breasts were frozen. If they were thawed, cook on high 4 hours. Garnish with parsley.

I usually serve with or over pasta, and sometimes rice. Asparagus is a great side dish with this meal, or green beans.
