So i wanna do something with rice, chicken, cream O broccoli (condensed) soup

What kind of proportions do I want to use to make sure the rice cooks?

yah, im THAT retarded lol.

Came out good. I used Cream of broccoli, cream of chicken & mushroom, cream of cheddar with 3 chicken breasts (frozen).Cooked on high for 4 hours. Then added frozen broccoli florettes and about a half bag of mixed frozen veggies. Cooked for about 45 minutes more on high. Made some rice pilaf on the side. Everyone liked it, including the 8 year old! 

Im thinking bout trying Tunas receipe wednesday and SM's on friday!

Thanks girls. I think i'll try it with cream of broccoli, frozen brocc, cream of cheddar cheese soup and maybe toss in a bag of mixed frozen veggies and then just cook up some pilaf on the side to pour it over. 

Both your recipes-sm and tuna- sound good. Im going to grab a big bag of chicken breasts so i'll prolly try out both new receipes this week! thanks ladiessss

we eat a lot of rice at home.

if you do, you may want to invest in a rice cooker.

we got ours for like $20.

it comes with a measuring cup, so you always get perfect rice, not mushy.

but if you're doing brown rice you've got to add a little extra water.

and, just as a side note, near east makes a good pilaf.

a great twist on minute rice if you are interested, instead of using water, use chicken broth (eg: recipe calls for 1 cup rice & 1 cup of water, sub the water with chicken broth instead).

There is a special rice cooker (crock-pot like).  I have a friend who has one and brags about how wonderful it it but I don't have one.  I agree with ladyc try cooking the chicken with the soup mix on top and server it over rice (that you cook in a pan).

Chicken and rice recipe (crock-pot style):

cube about 4 or 5 chicken boneless skinless breasts  (you can scale it down for 1 - mine is for a family size) 

4 cans of Italian stewed tomatoes (blend them up in the blender)

2 small onions chopped (optional)

veggies (like baby carrots or even a bag of frozen mix veggies)

cook on high all day (8 hours)

serve over rice (cook that in a pan separately).  It is soooooooo good.  The chicken is so fork tender.  This is even smartmom kid approved (hey to me that is a big deal)

oh it makes great left overs too - yummmmm

OK after posting this now I want it - so dinner tomorrow night (I'll add a pic later if I think of it).

Ok better late than never - this was dinner tonight so here is the pics:

 

 

 

OMG sooooooooo good and what 10 min prep time in the morning in the crock pot - let it cook all day and woo la dinner is ready (except for the rice).  Oh veggie wise I simply cut up a onion and added a bag of frozen mix veggies.  For rice I like to use a multi grain rice.

ingredients:

4 boneless, skinless chicken breasts

1 8oz pkg cream cheese

1 env. Italian dressing mix

1 can cream of chicken soup

1 can cream of broccoli soup

16 oz frozen broccoli cuts, partially cooked

hot cooked rice

 

use FROZEN chicken breasts and put all ingredients (except the broccoli) into the pot together - you don't even have to stir it up! It mixes well as it cooks. uook for about 4 hours on low - longer if you double the recipe. about an hour before serving, add the FROZEN broccoli to the mix and let it heat through while you finish any other preparations - like cooking the rice.

Ya know, rice is one of those things I just don't do in the crockpot.  Maybe it's just that I'm retarded, but I just can't get it right.   Every time I've tried, I've either left it all day and it's come out mushy and pasty, or it's been undercooked.  My advice is to cook the chicken with the soup mix in the crock, and just boil up the rice on the side.
