¡Happy Cinco De Mayo To nuestra comunidad española!

First....the history.

This will be the weekend to get your drink on if you are one of many partaking in the Cinco de Mayo celebration. There will be celebrations, festivities, carnivals, food, drinks, parades....and basically any reason to party in celebration of this day. Many I'm sure will stumble back to corporate America on Monday, the 5th of May. My family and I certainly will be out enjoying a taste of Mexico starting this evening...and the drinks will be plenty. Margaritas and Tequila shots seem to be the most favored. For cervesa drinkers, it is usually DOS Equis, Paficica, Corona, and Tecate. Chips, salsa, deep fried ice cream....you name it. 

How many of our GUG family members will participate by means of attending or enjoying some delicious Mexican fare?

I have nothing to contribute as far as recipes...But can I point something out...? (2na, don't get mad/offend ....please...?): 5 de mayo is a Mexican (actually, more of a "mexican-american") holiday, not a spanish one. From what I understand Mexicans from Mexico don't even celebrate the holiday to the extent that people here in the US do....But for some reason chicanos/Mexican Americans seem to like the holiday a lot....
 
BTW, your Spanish is not bad! Three words, but much more than I can say in German!!! Smiling

2na get mad?...nah silly! i didn't write the history, just read it and provided the brief wiki on it. i do speak enough to vacation, shop, and eat while i'm enjoying their beaches. however, i cannot write it. i rely on software for that. german too!

(frozen) Watermelon Margarita

Buy a seedless watermelon and cut it into 1x1 cubes, place in a ziploc baggie and freeze over night. In these margaritas, frozen watermelon takes the place of ice.

Ingredients:
 
about 3 lbs. of diced frozen watermelon (to measure out 5 cups)
1 cup Tequila of your choice (but it should be white)
1/2 cup fresh lime juice (from about 4 limes)
1/4 cup sugar, or to taste  (or agave nectar)
 
Preparation:
In a 5- to 6-cup blender blend frozen watermelon with remaining ingredients until thick and smooth.

Makes 6 Servings

Salsa (did I ever mention that Mexican food is my fav.)

I love home made salsa and I have it down to a real easy quick science.

Homemade Salsa!! It's sooo good and easy.

4 large cans of diced tomatoes (you can cut up fresh ones but this is easy) now if you do the can way you can really cheat and get the Del Monte Petite Cuts with zesty Jalapeños (I cheat and use those)

1 white onion diced (depending on the size depends on how much you add - it's up to you).

fresh garlic - generally one clove or 1 - 2 teaspoons of the refrigerated fresh chopped garlic (don't use garlic powder or garlic salt)

fresh cilantro (you can get it in the produce sec. of the grocery store). This is what will give it the sweet taste so add as you like (I like mine sweet but with a kick so I add alot but generally like a 1/2 cup for regular salsa) - cut it up fine

juice from a 1/2 of lemon

juice for a 1/2 of lime

jalapeños to taste (remove the seeds before chopping up fine) - if you use the Del Monte Petite Cuts with zesty Jalapeños then you skip this part
 
Crystal hot sauce (found that brand works the best but I'm sure any brand will be fine). Start off small and keep adding to taste. This gives it the salsa kick and makes it not so sweet. - this part is a option. I found with mine that using the can tomatoes with the Jalapeños gave it enough kick for me.
 
It looks like alot of work but it only takes about 5- 15 mins to chop and mix and is OH So Good!
 
Not to mention fun to do with the kids (don't let the kids do the jalapeños - if they get it in their eyes it's bad) and hey it's a vegetable (yeah!!!). Warning - it's very very addictive!
 
(for a twist you can also add some black beans and corn too)

 

So here is my salsa (I refuse to buy store bought salsa now):

I specialize in tequillllaaaahhh so here I go with drinking recipies:

  Original Margarita

1 1/2 oz Tequila
1/2 oz Triple Sec
1 oz lime juice
Rum the rim of a cocktail glass with lime juice, and dip in salt. Shake all ingredients with ice, strain into the glass, and serve. 

** For a little fun, substitue Blue Curaco for the Triple Sec. Then you'll have blue Margaritas. If you'd like to make a "top shelf" Margarita: use either Cointreau and Grand Mariner in place of the Triple Sec and a Premium tequila.  Me? I use cheap tequila-- it's just as effective *hic* Wink

 

I also like fruity Margaritas:

 Big Apple Margarita

2 oz Tequila
1 oz Apple Liqueur or Apple Schnapps
3/4 oz Lemon Juice

Shake with ice and strain into a chilled cocktail glass with a salted rim. Garnish with a slice of green apple, and serve.

** My girlfriends and I get together and do Margarita night. We've made several variations on the above recipe with Pomegranate and Raspberrry Schnapps.  Feel free to experiment.

The myth of the worm in tequila bottles was a marketing ploy that begain in the 1940's to impress us gringos and boost sales." According to the legend, the worm is rumored to have aphrosdisiac and even hallucinogenic properties. The truth is that even the worm can absorb some of the alcohol by its immersion in a bottle of tequila, eating the worm does not have any noticable effects on people-- although it's a little fun and a "drinker's rite of passage" to some.  More information about tequila can be found here here.

I love apple martinis so I'm sure I would love the Big Apple Margarita.

As for the worm and eating it - for my hubby is does have one effect - that your not kissing your wife anytime soon effect....nasty

Easy (very good and addictive) Mexican dip:

use a baking dish (like a cake dish - glass is best)

Just layer (in this order):

cream cheese (about a inch deep in the pan depending on the size of the pan depends on the amount)

re-fried beans (again like the cream cheese - about a inch deep)

heavy layer of shredded cheese.  You can use cheddar or I use the Mexican mix one.

pop it in the micro (if the pan will fit and you use glass) for about 5 min or you can use the oven 

get lots of corn chips and enjoy - its highly addictive (warning).

can I add this is great for the kids to make - easy and they get to help in the celebration!

Easy enchiladas:

1/2 lb cheddar cheese-shredded

1/2 lb monterrey jack cheese-shredded

*1 cup shredded cheese, set aside

1 package corn tortillas (i like mission brand)

1 small onion, finely chopped (optional)

2 cans enchilada sauce (i use 1 can spicy, 1 can mild- use the YELLOW BRAND- its the only really authentic flavored one!)

1 tub sour cream- regular works better than low/non-fat

1 can sliced or whole black olvies (optional)

*shredded chicken, beef, or ground beef optional (eggplant works well for vegetarians too!)

*****

mix cheeses,onion (and meat, if being used)together with all the sour cream in large bowl.

Lightly cover the bottom of 9x13 pan with enchilada sauce.

Add about 2 tablespoons of the mixture to corn tortilla. Toss a couple slices of olive on top.

roll loosely and place in pan. Fill pan in single layer only.

Pour remaining sauce over the top and sprinkle remaining cheese on top.

Bake at 350 for about 35 minutes, until cheese is bubbly.

oh maybe we need to make this a Cinco de Mayo recipe thread. I love mexican food so any additional reason to make it is all good to me.
