Chicken Parmesan

INGREDIENTS:

  • 4 boneless chicken breasts, tenderized to 1/2 inch thickness

  • 2 eggs

  • 1 cup milk

  • seasoned Italian bread crumbs

  • mozzarella cheese (8 slices or shredded)

  • marinara sauce (make your own or add a jar, maybe 16-24 oz.)

  • shredded Parmesan cheese

PREPARATION:

If you really want tender chicken, slice thin into 8 pieces and pound/tenderize them.  Whisk the egg and milk in a bowl. Dip the chicken breasts in milk and egg mixture and then in bread crumbs.  Dip and bread again for a thicker breading.  Brown both sides in a skillet of olive oil over medium-high heat. Pour a little sauce in the baking dish (enough to coat and set chicken in the dish.)

Pile shredded mozzarella cheese or place 2 cheese slices on each chicken breast. Pour sauce over all. Sprinkle with Parmesan cheese, a little more sauce, and shredded mozzarella and bake at 350° for about 25 to 30 minutes, or until bubbly. Serve with garlic bread and salad.

A little messy prep…but super easy…and well worth it!!

Sounds yummy. I'll have to get chicken and try it. It reminds me of a chicken dish at Macaroni Grill. My daughter got that and it looked really really good. And it was a bubbly dish just like yours.

For the breadsticks, you can take Rhodes rolls, thaw them, roll them out individually so they look like a breadstick, dip them in melted butter, then dip them in a mix of Parmesan cheese and dried parsley flakes. Place them on a cookie sheet, let them raise a bit, then cook them at 325 degrees for about 12 minutes. Just made these with lasagne this past Sunday and they are yummy. Would be good with your chicken parmesan.

How funny! I had a vision of the  olive garden when I read this.Cool   Btw, Lynn the breadsticks sound  delicious right now.  Gah I get hungry reading this stuff ! Good stuff

I tried this last night. Very easy to make. I bought my mozzarella already shredded and used jar sauce. Took me about 30 min. Family loved it.
