Here is my basic curry sauce, usually if i want to make different indian dishes throughout the week.
the whats:
1 onion (chopped)
2 tomatoes (chopped)
cumin needs (pinch or so)
3 garlic cloves
1 tsp of ginger paste
2 bay leaves
2 jalepeno peppers
1-? tsp of cayenne peper (however hot you want it)
1 tsp of salt
1 tsp of tumeric
3 whole cloves
1 cup of water
note: sequence is kinda important cause they each burn at different times but you want them all browned up a little bit
the hows:
chop up onions as finely as possible then fry with oil and some salt (about a tsp or so)and brown for a while
next add the chopped up jalepeno peppers
add cumin seeds, garlic, bay leaves, cayenne pepper and ginger
-be careful not to cook the ginger and garlic too much they burn pretty easily
add tumeric
after everything looks pretty well cooked and browned add the tomatoes
let this simmer for a little while
add the cup of water after the tomatoes have cooked for a while and the whole thing starts to look more like a paste
boil all this down to make sure everything is cooked well. you can blend it if you want
You can add this to chicken, meat, veggies, garbanzo beans... whatever....
each indian dish would usually require some added spice or ingredient (like butter chicken would have this but with extra butter and anise and some other spices with yogart on top of this recipe)

yeah it's pretty flexible. I was getting annoyed whenever i looked up indian recipes and they'd have stuff like "himalayan flower pollen" or whatever. This is stuff you can find at most stores.
