*you'll probably want a pressure cooker for this*
Start with pork roast or shoulder cut into approx 1 - 1 1/2 inch size cubes (make sure you remove some fat but not all the fat)
one nice sized lemon juice per pound or Pork (more if you like it really tangy)
1/2 tablespoon of ginger per pound of pork
salt and pepper as per taste
- Heat the pressure cooker and add I table spoon of vegetable oil and then add pork and stir it for 3 mins
- add lemon, salt , pepper, ginger
- cook the pork in a pressure cooker for about 1 whistles per pound of pork (add about 1/4 cup of water per Pound of pork in the pressure cooker)
- transfer the pressured cook pork to a big pan and slow cook till the gravy thickens and the pork is tender enough for your taste
- keep adding a little bit of water if necessary, stir ocasionally and make sure it does not burn or stick too much to the pan on slow heat
let it reduce a few times until you get the right sauce consistency and the tenderness you want
i guess you can use another kind of pot to cook but I couldn't tell you the time.
I also never tried this with a slow cooker but i couldn't tell you the time on that either
